ZooTycoon 2 Ultimate Collection can't install game

Damn, I was thinking of renting the Ultimate Collection, install disc 2 and then use my disc 1 to run the game.

Try uninstalling the Ultimate Collection discs only. You can uninstall the game discs without deleting your game save (don't, you would need to start over), then properly shut down your Xbox. When you start it again, install the Disc 1 of Ultimate, launch
the game, and when prompted install Disc 2. You may have a bad install for some reason.

But you cant mix the discs up, You must use disc one of the ultimate collection that goes with disc 2 of the ultimate collection

If you mean delete DLC you have bought then Install disc 2 then use disc one of the ultimate collection then yes you can do that, Thats what I done.
