Yes, you should still be able to play your owned games once you changed your primary email so there is nothing to worry about. Make sure to sign in using the new email moving forward and take note that you will no longer access the old email.

In the Xbox's settings you can set it to auto-sign in and not require a password on bootup. You could change your password, enter the new password yourself, and set it to auto-signin without a password so no one but you ever needs to know the new password.
This is how I have my Xbox set up and I never have to enter my password.

There is no way to move a Xbox profile from one Microsoft account to another. If you are using a third party email address as your log in information, you can

move that email address from one Microsoft account to another. However, this is not the best option in this scenario due to your email address being an @outlook.com email address. If you remove an outlook email address from a Microsoft account, there is

I don't think I've done anything on that outlook email with an xbox profile - is it possible to delete the xbox profile for the outlook email and then transfer across?
