The time should automatically correct when connected to Live. If yours is showing out then check that you have Daylight Savings enabled in the settings.

System Settings, Console Settings, Clock, Daylight Saving and select On. It will now automatically adjust for the clock changes.

Set the console language

When you start your Xbox 360 console for the first time, you are prompted to select a language.

To set the default language

1.Press the Guide button on your controller, go to Settings and then select System Settings.

2.Select Console Settings.

3.Select Language and Locale.

4.Select Language and then select the language you want to use.

Set the console locale

To set your locale

1.Press the Guide button on your controller, go to Settings, and select System Settings.

2.Select Console Settings.

3.Select Language and Locale.

4.Select Locale, and then select the location where you live.

Set the time and date

1.Press the Guide button on your controller, go to Settings, and select System Settings.

2.Select Console Settings.

3.Select Clock.

4.Change the clock settings.

◦Date and Time: Set the date and time.

◦Time Format: Choose the 12-hour or 24-hour clock format.

◦Time Zone: Specify your time zone.

◦Daylight Saving: Choose On if you want your console clock to adjust automatically for Daylight Saving Time.

When you are connected to Xbox LIVE, the clock settings can’t be changed.

The advice on that link is very odd since when you are connected to Live you can't set the date and time.

You can only set it manually when offline, as soon as you reconnect Live automatically sets the clock.

Try setting your system to automatically adjust for daylight savings time by heading to Settings, Console Settings, Clock, Daylight Saving, and selecting on which will automatically adjust your system's clock when daylight savings time begins and ends.
