Why Can't I sign in ps5 minecraft?

Usually that message appears when you had an account linked to your PSN account.
And right now unlink a Microsoft account from a PSN account is not possible.

"WARNING Once a Microsoft account has been linked to a PlayStation:registered: account, neither the Microsoft account nor the PlayStation:tm: Network account can be associated with a different account. “

If you choose to unlink accounts, then purchases will be returned to the account which made the purchase. Even after unlinking, Microsoft and PlayStation:registered: accounts can only be re-linked to the original account."

If you're more than sure that you're using the correct account / you never linked an account previously
You can reach Mojang support to see if something can be done from their side

But before that , this can be a bit odd but try changing your PSN and Microsoft account password

PS: Please note that right now no one at Microsoft can change this, and if you need it. Please check the article below to know when you need to reach Microsoft or the game developer (in this case Mojang)

Start over but it’s telling me in Minecraft on my ps5 to sign into that one but I can’t

I apologize but according to Mojang if you receive the error "The solution is to link the PSN:tm: ID to a different Microsoft account since the Microsoft Account you’re attempting to use is already connected to a different PSN ID. Each Microsoft account may only be linked to a single PSN ID and vice versa."

This means that the system detects that your Microsoft account is already linked to a different PlayStation account.
