Update not applying to Minecraft (Bedrock, Xbox One)

I have purchased Minecraft Bedrock for my son. He already had the Xbox One version, but we wanted to have the most recent version and be able to use add ons.

After installing Bedrock edition on the Xbox from the disc, we searched for updates and installed the update it showed. The update then installed - the progress bar for upload went to 100% with no issues.

Doing some research, the most recent version should be either 1.18.1 or 1.18.2? But the version number on the game is still showing as 1.2.81.6 - which seems to be almost the original version from 2017. I tried checking again for updates, but it now says 'No Updates Available' when I search.

So it seems that the update has installed, but isn't being applied to the game for some reason.

I have tried uninstalling and re-installing the game, checking for a console updates (no new updates), using my account (no use restrictions) as well as his (which is restricted - but was the one that allowed the update, so I don't think should be a problem), and (of course) turning the machine on and off again. Internet connection is fine, and was solid all through the update install, and console is logged onto the network.

I'm at a loss to what else I can do, or why the game is not properly updating.
