as you have a Hotmail account it is impossible to unlink it from the Xbox account.

if you remove a Microsoft email address from an Xbox account it will permanently delete the email account

You can add a different email address to the account, but to completely unlink your mom's email from it, the email will need to be deleted from Microsoft, if the email it's not from Microsoft there would be no problem, but if it is, you will lose access to it

You can't use the same email to create a second account, and to unlink the email that account must get deleted from Microsoft, so you would not be able to use the email to log in at all
