If this was purchased through Microsoft Store this is specifically for Xbox console, if you do have kindly check on your Xbox first for the v-bucks to sync. If not, you may need to reach out to Epic games first here:

It should give the option on the transaction at http://account.microsoft.com If not, try going through https://support.xbox.com/en-US/help/subscriptions-billing/buy-games-apps/refund-orders

When you sign in to https://account.microsoft.com/billing/orders can you see the redemption transaction for the Minecoins?

Hi, did you recently buy gold? Was it bought on the console or through a prepaid gold card? Did the code or transaction go through successfully?

Try holding the power button on the console for a full 10 seconds until it turns off. Turn it back on and see if it works.
