So I am having a hard time understanding how I earn rewards points from purchases because what I'm earning and receiving just doesn't add it up with my purchase history. I'm constantly buying games and paying for digital content in the store but I feel as
though I don't get much reward points back and I haven't gone up in the VIP rank in so long even though I have spent hundreds of dollars online!

We see that the majority of your recent purchases have been in-game consumables or pre-orders. As stated in the FAQ, pre-orders, subscriptions, and in-game consumables are not eligible for MyVIP:

What content on the Xbox Store is eligible for MyVIP?

Normally, most purchases for Xbox 360 and Xbox One from the Xbox Store qualify, including full Games on Demand titles (excluding game pre-orders), arcade games, indie games, game add-ons, game Season Passes, movies, TV shows, TV seasons, themes and avatar
items. In-game consumables, Xbox Live Gold memberships, Groove Music Passes, Microsoft Movies & TV Season Passes, and the purchase or redemption of Microsoft Points or Xbox Gift Cards, still do not qualify.

However, while reviewing your account, we see that you were incorrectly awarded at the free level last month. Apologies for the inconvenience. We will duplicate your MyVIP payback from last month to reflect the double amount back you should have received
as a Gold member. You should see this change shortly.
