Microsoft Rewards gift cards and offers may change from time to time to offer users different ways to redeem their rewards points. This means that if the Roblox gift card offer is not showing on your "Redeem" page, it's likely not available at this time.

I'd suggest regularly checking your Microsoft Rewards redeem page to see if this offer is added again.

The Microsoft Rewards program allows you to redeem your points for gift cards, sweepstakes entries, nonprofit donations, and more.

Earn rewards by doing the Daily offers, Weekly quizzes, Daily quizzes, Search to earn, Shop to earn. For more information, check out this page

With the Microsoft Rewards program you earn points for doing certain things (browsing with Bing, completing specific searches, making purchases from microsoftstore.com) You can redeem the points for gift cards for various things including Xbox gift cards
or old subscriptions. The points from that program are not directly transferred to your account.

With the Xbox Rewards program, you earn rewards credits for completing offers (mostly digital purchases from the Xbox store). Those credits are deposited directly into your account as currency.

If you're signed up for the Rewards program, all offers to earn credits are listed on the Missions page of the site. If it's available for you you can also sign up for the Bing Rewards program and earn points that you can redeem on Xbox gift cards. Otherwise
there is no other legit way of earning Xbox currency.
