Removed account and signed back in but has made me create a new gamertag and lost all saved...

We appreciate your coming to the Xbox community, and we're sorry that you have experienced this type of issue. It was not necessary to have created another account or Gamertag, you would just need to log in with your email and password back to the Xbox, and your games, progress would be there. Make sure you are not using a different account, as this type of issue was not supposed to happen.

I made sure not to create a new xbox live profile, since I already have a gamertag. When I clicked on "games" on my laptop, and tried to sign in, it took me to a screen that prompted me to create a new xbox live profile under my new Microsoft account. I
made sure to back out, and that is what prompted this whole process.

I am pretty sure there is not a new gamertag associated with my new account. I don't want there to be; I want to switch my current gamertag to my new Microsoft account.

Did you delete the profile off of your console or delete your whole account? If you deleted your profile off the console, if you just sign back in using the email and password associated with that account all the saved data with it should be backed up both
in the cloud and on the console. If you created a brand new console/profile you won't be able to access the saved content from a different account.

So sign in with the other account if, as you said, you made a new account and everything should be there. If not, you would have to play games all over again to creat new data... or contact support if you are in fact using the original account and everything
is just gone.

By creating a new gamertag and using a new email, you will have to create a new epic account for each. Epic accounts can not be transfered and all DLC and game progress will be lost. This is the same for any gamer points earned on the original gamertag.

if there wasn't a Microsoft Account (email address) attached to that 360 gamertag then there is no way to recover it.

A gamertag can be redownloaded when there is a Microsoft Account connected.

If you create a new Microsoft Account then you can create a new Xbox Live Account on it which can be used for online gaming and browsing the store etc. (Online gaming will require a Gold subscription though) but progress on games, purchases and gamerscore
etc is usually saved on the Profile itself so that's all lost.
