The solution is most likely just time. The system needs to update and reflect what the account actually shows. In the case of the Game Pass Ultimate conversion process, it will indeed show that your subscriptions to Gold and/or Game Pass will be canceled,
with the Game Pass Ultimate subscription replacing it.

Your 12 month Core will convert to 6 months of Ultimate. While your 12 months EA Play codes will convert to 2 months of Ultimate.

Please keep in mind that in this forum, we are players like you. Therefore, I am unaware of the reason why they do not simply charge you the difference. The only thing I know is that the conversion is done as I mentioned before.

If you do not wish to go through the conversion process, you can request a refund for your Game Pass Core subscription and then simply purchase Game Pass Ultimate by providing the necessary information at the following link:

In the field where they ask you which item you want a refund for, please write the full name of the subscription. The purchase order number can be found at the following link:
