    Hi Sidney!

    The difficulty is set when you start your game. If you want to go back to easy, you have to start a new game. Have you tried making a new Profile in the game ?

    Quit a fun game. Remembering playing it a lot on the GC and my Original Xbox. As i recall, you set the difficulty at the start of each game, and i not able to change it during gameplay, if that is what you are thinking about ?
