Have you made sure that your Windows system and all of your video card drivers are completely up to date? I also suggest re-installing the video card drivers in case everything is up to date but the issue persists.

Have you been able to record this game in the past using the Windows + Alt + G command? Some game will not record properly with the Game Bar and they will come out blank. Take a look at this troubleshooting guide for some more information:
