My Xbox One X keeps updating rather frequently and during my game time.

My XBOX has updated itself three or four times in the last week or two. Today it just updated right in the middle of playing a PvP match. I wanted to capture the last 30 seconds of gameplay and as soon as I hit the Xbox button, things sort of Locked Up
and all the sudden it said, time to update. Really? Right in the middle of playing a game?

Do you mean console updates or game updates? You can set your console too automatic update by setting instant on and automatic updates.

If your getting 3 or 4 console updates a week then your in the preview program and thats why your getting them.

It shouldn't be happening that often when not in preview. Perhaps you should perform a factory reset while keeping all your games and apps installed.

That's the first thing I thought too. I don't remember signing up for it, so I installed the app and checked. It had the option to join, so I'm assuming I'm not in the program.

I'm sorry to hear about you Xbox's constant updating that you've been experiencing. That's definitely a unique issue.

If you haven't already done so, go ahead and try performing a Soft console Factory
reset on your console by doing the following:

Press the Xbox button to open the guide.
Select Settings.
Select All Settings.
Select System.
Select Console info & updates.
Select Reset console. [Keep my games and Apps]

Make sure you have both yours and your son's email and password on hand as you will be asked to sign back in. There is an option to delete everything and to save your games and apps; choose the latter.
