Creating a new Microsoft account won't give you back access to Minecraft. You would have to purchase it again and you would also lose any saved game data.

That doesn't really help because I still don't have Minecraft on my account, that is why I am suspicious that my account has been hacked in to and deleted by someone

I have exact the same problem. My Email was hacked a few days ago and i think somehow the hack also hacked my Microsoft which has the Email and changed the Email from my Minecraft account to another one.
