Unfortunately, even if you contact support, they are technically the owner of the account so there's not really anything support can do.

As I stated in the question, I am not logged into this email and therefore cannot access any emails on it. I do have access to the email with the verification code which I used to migrate my account but this does not list the email I migrated to. Is there any way I can contact someone from Microsoft to get my account back? I have plenty of information to prove I own the account (Transaction ID from when I bought Minecraft, my password for the Mojang and Microsoft account, email for the Mojang account etc)

Actually, if you will contact chat support. The only way for you to be able to prove that you're the owner of the account is if you will be able to at least get a verification code on one of your emails or phone number. That means those have been attached
to the account. Aside from that, they won't be able to fully access the account to give you the exact email. Neither would phone support as they both have the same tools. So basically, your best bet would be to try to access as much email as possible to see
if you will receive a verification code.

The problem is its my entire microsoft account that has been hacked but theres no category for that on the forums. I tried both those pages but as my email has been changed there's no way to troubleshoot. I can easily prove my account as I can prove access
to the initial set up email, card numbers and my identity.

Not having access to the old email address may prove difficult, but if you contact customer support they may be able to change the emails on the accounts if you're able to prove its you doing so. I'd give that a shot honestly.
