Let's say that the only alternative you have at this moment is to send the account recovery form (If your email was deleted, and you cannot fill out the form, unfortunately nothing can be done), I have also been through this situation, therefore I can give you some recommendations:

The first thing is to enter information that the account has, in case a phone number or card has been deleted, you should simply omit that information and not add it to the form. That said, you can enter the following link:

That doesn't really help because I still don't have Minecraft on my account, that is why I am suspicious that my account has been hacked in to and deleted by someone

Thank you for bringing this issue to our attention. Do you mean that someone hacked your account? The article entitled

I Think My Account Has Been Hacked is able to help recover an account. The
Xbox Support Team is also able to assist with recovering a hacked account. Be sure to let us know the results!

So what steps do you suggest I take?

I just checked again and there is now another email associated with the account that ends in 21cn.com which is a Chinese company.

Not sure what this means or what I can do.

They must have added that email to the account and deleted my original email because whenever I attempt to sign into my old account with my original email, I get the notice that an account with that email does not exist.
