Hi PianoScarf38288 (and son)! At the moment, Minecraft: Xbox One Edition doesn't support third-party mods, and there are also no mods for download through the Xbox / Windows Store. This may change in the future, especially with the Better Together Update
coming to Xbox One, Windows 10, and Pocket Editions this Fall, but at the moment there is no mod support in Minecraft: Xbox One Edition. Sorry, but I hope your son still has a blast in Minecraft!

Are you looking in the right biomes? I think prairie is where I found mine.

The Plains biome is the only biome where horses can spawn.

The game should have that update applied, try spawning one with a Horse Spawn Egg in creative mode. They were added in the last major update.
