Recently, Microsoft started to integrate Minecraft Java accounts with Microsoft accounts. Could you have merged the wrong account at some point or signed in with the wrong account?

You must own Minecraft Java Edition on the account to change it's profile name. So in this case you'd either have to subscribe to Game Pass again, or buy another license for the game. I'm afraid those are your only options. Please reach back if you have further questions.

If I may ask, what Minecraft version you have purchased? Is it Minecraft for Windows, or Minecraft Java Edition? Have you migrated your Mojang account to Microsoft account? If you have already migrated your account, use your Microsoft account to sign into Minecraft.

For Minecraft: Java Edition, users who have a Microsoft account can change their username for free at Log in | Minecraft. Navigate to My games and select the Minecraft: Java Edition dropdown box or you may refer to this link: Minecraft: Java Edition Username VS Gamertag FAQ – Home

As per your description, after changing the username and sign in the account, it seems that you do not own the game. Have you tried to sign in the account with old username to check if you can play with Minecraft just fine? That is to check if changing username with the version you have purchased is permitted. If you can sign in the old account with the old username and able to play the game, it would mean that changing the username of the version of Minecraft you have is not applicable. The Differences Between Gamertag vs Username

With the upcoming migration for Java Edition, there may be some confusion about what Gamertags are and how they differ from Usernames. This article should clear up any confusion about the differences between the two.

Gamertags are used for Microsoft accounts only. If you view your Microsoft account online, you will see your Gamertag as your account name and not your Minecraft Username. Any purchase information and account settings tied to your Microsoft account will display your Gamertag. You can find your Gamertag by signing into https://www.xbox.com/en-US/ and checking the top right.

When playing Minecraft: Java Edition you will see your Username in-game and not your Gamertag. The only time you will see your Minecraft Username is in-game and in your Minecraft account settings. You will still be able to view and change your Minecraft: Java Edition Username as usual on www.minecraft.net. Just navigate to your profile information.
