Responding specifically to your questions:

1. Microsoft cannot unlink the Microsoft account assigned to your Playstation, as mentioned before, that restriction is from Playstation/Sony.

Sorry to hear about the trouble here, however, in order to retrieve your account, you may need to recover it by following the steps here: https://support.microsoft.com/account-billing/h...

Thus, please note that once your PSN has been linked to a Microsoft account even if you use the "unlink" option in the game settings, there's no way for you to relink your PSN to a new Microsoft account and vice versa.

Mojang has stated it here: https://help.minecraft.net/hc/en-us/articles/44... and stated that "Once a Microsoft account has been linked to a PlayStation account, neither the Microsoft account nor the PlayStation Network account can be associated with a different account."

But if you believe it has been linked incorrectly, you may need to reach out to Mojang here: https://support.xbox.com/help/games-apps/game-t... and see "Get help with Minecraft on different devices" and click "Submit a request".

If you have issues with the PS4 account try contacting them. Even if you dont have the password, if you know the details of the account (name, date of birth, security questions, etc) they might send you a link to reset the password where you could disconnect
it.
