Sorry to hear about what happened, however, kindly note that since this is a public forum, most of us here are end-users like you as well and have no access to accounts.

As far as I know, it's not ideal to completely remove your mother's email address, thus, adding an alias will work in your case. Sign in to your profile at account.microsoft.com/profile > Scroll to "Account info" > "Edit Account Info" > Add Alias and from then on, you may use this alias to log in moving forward.

Please be informed that if you're using a Microsoft email address, it cannot be transferred or switched to a different account. We can only switch 3rd party email addresses.

You don't have access to the original email address linked to the account, but have you access to your account with email and associated password? because you can add alternative emails and phone number to receive auth code and so on. You can also switch
to the new alternative email address as a "default" address for that gamertag.

Please be informed that there's no way we can transfer account data and licenses. They will remain on that account. What we could only do is to switch or transfer email address as a primary email address of the account. However, that can only be done if the email address we're talking about is a 3rd party email address since we can replace it and transfer to a different account. If that was a Microsoft email address, there's no way we can transfer that to a different account since Microsoft emails are Microsoft account itself.
