If I wipe my Xbox 360, will that delete my account that was transferred over to Xbox One?

your account is safe, you'll just delete it from the 360 and not completely.

Your account and your data is safely stored in the xbox live servers. Anytime, anywhere you can download it again in a new console by using your email address and your password.

Any sort of achievements currently on your account (the number next to your gamerscore with the G) will transfer over to Xbox One. It's like downloading your profile to another Xbox 360. In the place of another Xbox 360, you'll be transferring to a Xbox One,
nothing will change in that regard.

If they aren't interfering with the Xbox 360, it won't interfere with the Xbox One. Just so you know, deleting the account from a console does not wipe anything at all, it only gets it off of your console. That account will always exist in the cloud. Once an
achievement is "modded" your gamertag should be reset when it's reported to the Xbox LIVE Enforcement Team. That will make it so that gamertag cannot re-earn achievements that were previously earned and the account would be marked with a "Cheater" tag.

Unfortunately bro It's a one-time migration, Once Choosing to do it will permanently delete your GTA Online account on the PS4 or Xbox One or Previous Progress on the normal version. PC players cannot transfer their accounts over to a next-gen console. Old accounts on the PS3 or Xbox 360 that never transferred over aren't eligible for this process.

And if you started a character on the new version of gta you cannot transfer to the previous one.
