According to information obtained from the Official Xbox page, you can cancel the Game Pass Ultimate subscription at any time by logging into your account. On Xbox Game Pass Ultimate, select Manage, then Cancel Subscription. You'll see an option to end the subscription on the expiration date. Depending on the status of your subscription, you may also have an option to end your subscription immediately with a refund of the price you paid for Ultimate only.

You can also cancel the subscription from the console:

1. Press the Xbox button on your controller to open the guide and go to Profile & system > Settings.
2. Select Settings > Subscriptions.
3. Choose your subscription and follow the steps to cancel it.

As you don't remember your account email, you can try to proceed with the account recovery form, in that way you're going to submit a ticket with Microsoft account recovery team https://account.live.com/acsr

You can try all the emails you remember or if you had a phone number attached to the account, you can use that too.

If you're not able to recover the account or if you don't want to do that, the next step is contact your bank and ask them one of the next:

A. Block all the incoming charges from Microsoft
B. Ask them to freeze / block the current card and get a new one
