I am having the same issue.

Logged into the new Xbox with my email + password, which went through fine. But it created a new user account instead of showing my old account. This is preventing me from connecting my Xbox account to my Ubisoft account since it goes by the username and not the email.

How do I get my original username back?

Let me provide you the steps on how to change your username/gamertag however just to set your expectation, here at Microsoft Community forums we don't have the option to access your account information, but we will do our best to help you sort this out.

To synchronize your usernames, you can change your Gamertag through the Xbox website or directly on your Xbox console. Here’s how you can change your Xbox gamertag (username) on your phone:

1. Go to the official Xbox website.
   
2. Sign in with the Microsoft account email address and password that’s associated with your Xbox profile.
   
3. Confirm that you’re signed in to the right account by ensuring it says your current gamertag in the top-right corner of the page after signing in.
   
4. Enter the new gamertag that you want in the text box and select Check availability.
   
5. If your desired gamertag is unavailable, you’ll need to create another one.
   
6. On the next page, review how the gamertag will look across Xbox services.
   
7. If you’re satisfied with your new gamertag, select Claim it.
