I can't access ForzaHorizon 5 Premium add-on contents in Xbox Game Pass Ultimate

Game Pass Ultimate doesn't give access to that add-on. You would have access to the standard edition of the game with Game Pass and can purchase the add-on to go with it.

I think i could access all bonuses if i buy premium bundle

As noted already, unfortunately only the Standard Edition of FH5 is available on Game Pass.

You can always purchase the add-ons bundle if you access FH5 through Game Pass: Forza Horizon 5 Premium Add-Ons Bundle | Xbox or if you would prefer to own the game with the premium add-ons, then you would need to purchase the Premium Edition

You receive the Car Pass, the Welcome Pack, VIP Status and the Hot Wheels DLC releasing July 19th with the Premium add-on.

If you buy the Premium Edition add-on bundle, it'll give you access to everything the premium edition has without buying the full game. I would like to add that if you're planning to play on cloud, there's no point in purchasing the game as it is already part of game pass ultimate that you are required to purchase to access the cloud

Any and all of the premium add on planes are available la carte in the game
