I am having some troubles with the controls for the Ori and the blind forest.

I am currently using a PS5 controller, connected through USB, all up to date. There is no reaction from the game when asking to use LT/RT. RT was supposed to unlock the ability to grab onto things, however, the game completely ignores that command. Is there a way I can rebound the controls or have them somehow fixed?

Sony doesn't make general drivers for Windows, you'll have to ask them to do so. Launchers where they sell their products have those drivers built into them.

So you need to ask them to make proper Windows drivers.

On the XBox One I would have to say Ori and the Blind Forest. On the 360 I am going to have to say Dante's Inferno.
