I accidentally deleted the store on my Xbox series s.

It's a known issue, but unfortunately MS's advice is to not cancel the download and to restart the console instead. They don't say what to do if you do cancel the download, which then makes the Store disappear!

Have you tried restarting your console? If that doesn't work, you may need to do a factory reset, choosing the option to keep your games and apps installed. Once that's done, you will need to sign back into your account(s), so make sure you know the login details. You won't need to re-download nor reinstall any games/apps/DLC, so it doesn't take too long.
