Please open Minecraft on your PS5 and go to the "Settings" menu.

And then navigate to the "Accounts" section and look for the option to unlink the Microsoft account. Kindly conform the action for the unlinking request.

If the unlinking option isn't available, you may need to delete the saved data for Minecraft. To do this, go to your PS5's "Settings" menu.

Select "Storage" > "Saved Data" > "Console Storage."

Locate Minecraft and delete the saved data files (this won't affect your world designs).

And then relaunch the game and follow the setup instructions to link a new Microsoft account.

Unfortunately, it is not possible to unlink the account via the Microsoft once it has been linked. Also keep in mind that only one Microsoft account can be linked to a PSN account.

You can unlink it, but you won't be able to link a new one, only the one that was already linked. To link a new Microsoft account, you need a new PSN account.
