How much hard drive space is used per game? or how many games can be saved on a 500GB drive

Each game is different so someone will be relatively small and others can be very big. Before you download a game it will let you know how much space is required and, if you don't have enough, you will be prompted to clear space. You'll probably get anywhere
between 5-10 games depending on size but don't forget, you can purchase an external drive and connect that to your XBox One to increase available storage.

so the 500GB ( or 370GB ) internal drive would offer plenty of space for game saves if I used an external as my main storage for the games and apps?

If you can afford to get the bigger hard drive, you'll definitely want to. Only games saves are stored on the cloud. The games themselves will be installed on the hard drive. That date for One games is much larger than 360 games. A 500gb hard drive comes
with about 360gb of usable storage space that can be filled up really quickly with only a few One games.

Going by how much space my Halo Reach took when I saved it to my hard drive 6.6GB it wouldn't fit your 4GB drive. However I do believe you can save it to your flash drive if you give it enough space to hold the game and play it.
