How do I set my profile to being able to sign in offline?

You should first set your console as your account´s home xbox:

Press the Xbox button  on your controller to open the guide.

Select Profile & system > Settings > General > Personalization, and then select My home Xbox.

Select Make this my home Xbox.

Then, You must be online when you set up Xbox for the first time. Without an internet connection, you can’t finish setup. After your console has updated and you’ve added your profile, you can go offline

Finally set your Xbox to offline

To disconnect your console from the network for offline use only:

Press the Xbox button  on your controller to open the guide.

Select Settings > General > Network settings.

Select Go offline.

Now when you say it won't let you play without signing in, are you referring to an Xbox Live Profile? You'll need to sign in with a profile to be able to play, even if the console is online or offline, and it's possible that it would need to be online with
both profiles at least once to verify account details, settings, and restrictions.

You could have set your Xbox to offline and still signed in to your account in return being able to play your games just offline.

From the sound of things it could be that your sons account when put onto the console or created was set up with sign in preferences that could stop you from being signed in while offline. You can go to your settings and select the Account tab while the
console is connected to the internet then select where it says sign in security and passkey. Once there press "A" on the tab that says "Change my sign-in & security preferences" and set it to no barriers. Once that is done he should be able to remain signed
in in offline mode.

You mention not being able to sign in offline, is this because you have completely removed your profile from the console and are tgen trying yo sign back in? If so, the console will need an internet connection to obtain your profile so you can sign in.
