When you change the email associated with your Microsoft account, it will not delete the original email or any of its other corresponding data. Changing the email simply means that the email address linked to your Microsoft account will be updated to the new one you provide.

The original email account will remain independent and unaffected by this change. It will no longer be associated with your Xbox account, but it will still exist as a separate email account with its own data and functionality.

Microsoft can only assist with billing queries if you have access to the account. You'll need to contact your bank or financial institution to cancel the charges. If you pay with card I'd suggest cancelling the card too.
