How do I recover an account that I evidently forgot email and password on?

You can still get emails about an account and the email not be the Microsoft account email. Ms makes customers usually have their sign in email and a different email for back up. The only way with out remembering or see the email on your old xbox would be
to call in support at 1-800-4MY-XBOX. They can look up your gamertag to try to find the information.

you should be able to reset the password by typing in your email and selecting "Forgot my password"

Try recovering your account, it usually gets rid of ALL passwords except the account email password, I forgot my pass to sign into my account on my xbox so i recovered the account and the pass disapeared.
