How can I change languague from i.e. spanish to english in Age of Empires I definitive edition?

Go to Options within the game > The first option is "game language" > Set for English and then click confirm on the bottom left of the screen. Done.

Usually the games language settings depend on your device settings, so if you set your device/ Xbox app language to English, it should be the same in game. There are games that will let you select a specific language upon installation or you might have to download them again depending on how the developer packed the different language files. There are also games that are developed with languages depending on the region of the game. However, in your case, I recommend contacting the game developer for options to change the language settings of the game.

Which one? Only ask as all 4 are available on GP in the UK

If I (from the UK) look at the UAE page for the Age of Empires Definitive Edition, for example, it says it is available on Game Pass:
