Well since you like Fable, I would look into Kingdoms of Amular: Reckoning. Can't recommend anything based on Bioshock since they would either be shooters or scary. I haven't played KH or HM so Im not sure what the 360 has to offer that is similar to those.

Welcome back! I took a break as well and now am glad to have returned. 3PS games I would recommend are Gears of War, The Division, Tom Clancy Rainbow 6 or Ghost Recon, GTA5, and the Evil Within (if you can handle the horror!). Also, doing co-op campaigns
of the games can be a good way to get back into things and have a friend help you out along the way. If you see me online, I'd be happy to play. Again, welcome back.

Don't forget Fortnite Rezawreckta! It's a game that will be f2p next year, but you can currently buy early access. I'd recommend it if you like tower defense/survival games/3rd person shooters/party games!
