I am very sorry that you are going through this problem, with the intention of helping you or offering you a solution, I did an internal search in the forum and found a response from the user FatalDarkprince where he published a solution, which is the following:

Plug your headphones into your controller and plug your controller into your console. Go to settings > device > accessories > update driver. Once you update the controller, you update it with the headphones, and then you should have control of the mixer. Otherwise, contact Xbox Support.

UPDATE.

I figured it out.

Hard reset the xbox with the headset plugged in. The new controller has the chat mixer turned all the way to chat and not to game . Put the mixer back to the middle and it works. Without the hard restart, the option to adjust the chat mixer is gone.

I've done everything including buy a new console and headset and mic won't work on chat. Is there an underlying setting I'm missing?

I was just in chat because none of my headsets work and I also asked about that as well because mine does the same thing. Apparently it was from the update. I can't get that to unmute either. My main issue is that nobody can hear me via chat in party
or game. I can hear them but they can't hear me. My chat mixer does not show up when I plug in the headsets. I've tried 2 different headsets and 2 controllers. Reset console and NAT settings in router. Nothing works. The chat mixer seems to be a bug
which they are working on but I mean come on, I couldn't chat before this update so....

The headsets work testing Skype on the console and i tested them on the laptop so I know they function. It's really frustrating not being able to chat with your friends.

Same thing with me my audio for my xp500 works just fine. The buttons still work on my stereo headset adapter but my chat just miraculously stopped a few days after I bought it now no one can hear me through regular chat or party plus I have two controllers
updated. I've done everything to try and fix it. Including he cold reboot, redoing the controller update,and unplugging everything. Still nothing, this truly sucks.
