Get the 'xbox controller only' version of the cloud gaming interface.

I'm so sorry for what you're going through, there is currently no way to force the "controller only" version of the cloud gaming interface. The version displayed depends on whether the game you are playing supports touch controls.

If the game supports touch controls, the "with touch controls" version will be displayed by default.

However, there are a few things you can do to increase the chances of the "driver only" version showing up:

Use an Xbox controller. Cloud gaming works best with an Xbox controller as it is designed to be compatible with them.
Update your drivers.

Make sure you have the latest Xbox drivers installed on your computer.

Check your game settings. Some games may allow you to disable touch controls in settings.

If you've tried all of these things and you're still seeing the "touch controls" version, it's possible that the game you're playing doesn't support the "controller only" version.

In this case, you will need to use a touch controller or a keyboard and mouse to play.

Microsoft is working to improve support for the "controller-only" version of the cloud gaming interface.

It may be possible to force this version manually in the future.

only the standard Xbox pad can be used for cloud gaming, this is unlikely to change in the near future. The controller emulation interface that allows it to work with the cloud is only configured for that and other X input standard control pads

As far as I know there are no games that can use guitars that are available in the cloud, and given latency issues I don't think you would want to play them

Currently the versions running on cloud are the Xbox system versions, and not the PC. Currently the protocols and algorithms that allow cloud gaming to function are only tuned for the Xbox controller. Well additional control schemes may be added in the future, currently only the controller is supported, as the system is still in beta

all the cloud based games are the console versions, you are connected to actual console hardware, hence only controller support.
