It is not possible to use an Xbox gift card from a different region, in order to redeem the codes or use the content you will need to have your Xbox gift card, payment method, and Xbox Live account region all in the same region otherwise there will be a region discrepancy.

The best option is to request a refund by signing in to your account where you have bought the game here on the refund web form link:

Then follow the instructions. After submitting your refund request, your refund will be accommodated within 72 hours.

well the thing is you can't use a Spain payment method on a UK account or us accounr

You need to use a Spain account to use a Spain payment methid nor it is suggested you use an out of region account

You can change this on the console

Language settings is independent of the account region fyi but only affects xbox one settings not 360 games

Yes I know I can do that. But I don't need to change it at the console. Its when I try to purchase something from the store on my pc. I get a message on each account saying I have no payment type and when I go to create a payment type, the region on one
is Spain and the other US. I need to be able to purchase in the UK store with either of the accounts.

Microsoft rewards checks your IP address as well in order to show the rewards available in your country, so as you’re still in the UK, this is why you still see the gift cards available in UK currency.
