Fifa 23 Ultimate Edition Not Working

First, make sure that you're seeing the game order stated as "completed" and it should be the FIFA 23 Ultimate. Once confirmed, simply perform a powercycle on your console by following the steps below:

1. Turn off your console by holding the Xbox button on the front of the console for approximately 10 seconds. The console will turn off. ​​​

2. Turn your console back on by pressing the Xbox button on the console or the Xbox button on your controller. ​​​

Also, please note that you'll see the Standard edition icon but you'll still have the Ultimate Edition for your game.
