Thanks for reaching out to the forums. We see you have a question on converting a gold subscription to a gift card for Ultimate subscription. Unfortunately, this is not possible. For one the Xbox live gold subscription is cheaper than an Ultimate subscription.
If you haven't had Ultimate you can convert to the ultimate and the 12 months should convert to Ultimate time. Here is the
