Can't use games on my 360 hard drive without being connected to the internet

My 360 hard drive.

Cant change profile name or anything without the keyboard.

Correction: My 360 does not have an internet connection.

sounds like you may have a problem with your internet connection, Is wired or wireless?, or maybe try removing your hard drive from the xbox and then try it without your hard drive in. this will remove the chance of it being the hard drive.

Hey there. Try booting up your console without it being connected to the internet. Do you get the same results? Also try booting it up
with the hard drive removed, and see if that has any results. Post back afterwards as to what happens.

In order for backwards compatible games to run on a 360, you need an official hard drive (the emulation software is pre-installed on them and can't be downloaded separately) and be connected to the internet.

Was there a specific reason why the other console had no internet connection? There is a reason why I ask this.

If the other 360 without internet was a console that was somehow modified (e.g. to play unsigned code or copied games), the digital signage on your USB drive is being flagged as untrustable by any console with proper Xbox Live connection and latest updates.

So if the offline console was a modified console, then the "broken" trust on the modified data of the USB stick broke your profile during the update. Not the update itself.

Unfortunately, if your profile was never online, and the other console doesn't have the profile on it's hard drive as well, then I'm afraid your profile is now lost
