Can you change email without having access to the email?

I'm sorry to say, but Microsoft support is not capable of modifying account information or sending account reset links.

However, if your friend's account is added on the Xbox, she could try to reset the password by following the steps in this article https://support.xbox.com/help/account-profile/manage-account/lost-password-solution > Reset your password on your console.

Otherwise, she could try recovering the account by submitting the account recovery form but using instead a previously linked phone number or previously created Skype username (is not the same as our gamertag)

That's not possible without having account access, you need to remember the email used to create the account to have access to it then you can change the email

if you are able to log in to Xbox.com you can change it without access to your email. If you want to change the mail, you will be ask to confirm your email and the system wants to send you a code. At this point you can chose the option, that you don't have
access to this email anymore. Then follow the instructions.

Just a heads up that changing the email address on your Microsoft account would need a verification through that email in order for you to change it to another one. If you are not able to verify that email, you will not be able to change it.

Although, if you still have access to that Microsoft account, you just have to make sure that your security proofs are up to date so that you can still access the account without issues through verifying it from the security proofs added.

The only way to have this changed is to have access to that email. I would suggest recovering that email so you can change it.
