Can we talk about how stupid it is that I can't link my old Xbox account to my new email?

Well, no, because the Xbox account didn't exist until I made it. I could have used this email as the alias for my old account had I not mistakenly signed up for a new Xbox account with it. I made the Xbox account, so why can't I delete it from existence, and then use this email as the alias for my old Xbox account?

if its an outlook or live email created with microsoft then it auto creates an xbox account as it auto creates a microsoft account, if you used a third party email like gmail then create a new alias, make that primary then remove the email address.

the email which is the microsoft account IS the xbox account, they are all one in the same.

This old account that you owned the Gamertag and email is one thing, that is, if you wanted to use it on your Xbox you would have to do with the email from that account.
