Can unplugging the series x while it's on damage it?

Nope, if you waited a couple minutes and then you disconnected the power cord from the console you're good to go

As long you don't do it in the middle of the game or when the console or a game is telling you to "not disconnect the power cable" the console is ok

Yeah i agree i think you be ok i dont "full shutdown" my xbox one x and its step up like that and i unplug it to move it when i plan to travel with it but also just if you unplugged it to move better to make sure you have any disc in there either

That is really no different than having a power failure while in the instant on mode. It is extremely rare for that to actually cause any real issues.
