Unfortunately not, as Microsoft/Xbox gift cards can only be used in the Microsoft Store and this edition of the game isn’t available through the Xbox Store.

Generally, you should be able to use Xbox gift card or Microsoft balance to buy games on Xbox Store. Please note that there are some contents that cannot be purchased with Microsoft balance. Take note as well that in redeeming gift cards or token/code, the system may require you to add a valid payment method as a form of verifying your account through the system.

You may check your options through https://www.xbox.com/games/store/minecraft-java..., the game can be bought as a gift where you could ask a friend or a family to send it as a gift to you and you just pay them.

The Java version and the Windows 10 version are two whole different games. Microsoft/Windows/Xbox prepaid gift cards can only work through digital store fronts (or in some cases the actual brick and mortar store) listed on those cards. There should be a
list somewhere in the FAQs that tell you where all you can use said gift card monies.

You cannot use that money to buy things from an outside realm, in this case the Java version is considered an outside realm because its technically the "original" version of Minecraft nowadays and isn't the Bedrock edition available through all things Microsoft
and beyond.
