Can I unlink Microsoft account from PlayStation?

Try unlinking your Microsoft account from PlayStation (if possible because I don't use it). you can also unlink 3rd party apps/sites (such as PlayStation) from your Microsoft account from here:

I need to unlink my PlayStation Network account from my old Microsoft account which I don’t remember, & link it to a new Microsoft account to play Minecraft

You can unlink the psn account however you CANT link a different one.

Note: Once a Microsoft account has been linked to a PlayStation® account, neither the Microsoft account nor the PlayStation™ Network account can be associated with a different account. 

If you choose to unlink accounts, then purchases will be returned to the account which made the purchase. Even after unlinking, Microsoft and PlayStation® accounts can only be re-linked to the original account.

My Son had not played Sea of Thieves for some time on PS5, when he went to play again it asked to log back into Live.com. Unfortunately we have linked SOT to the wrong live.com account (I wasn't sure which one it was). The game will now not play (says SOT services are currently unavailable - strawberry beard).

We’ve tried uninstalling/reinstalling the game but it ones up with the same screen.
Is there a way I can unlink the account?

Unfortunately Sony makes it so that once a Microsoft account is linked, only that specific Microsoft account that gets linked can be used.

Even if you managed to unlink the Microsoft account, when you go to link a Microsoft account again, Sony will only let you relink that same Microsoft account as before.

What happens when I unlink my Microsoft account?

IMPORTANT Once a Microsoft account has been linked to a PlayStation™ Network account, it cannot be unlinked without loss of access to entitlements and Minecoins on other platforms.

However, even if you unlink it, according to Mojang you can only Re-link it to the original account, you cannot link a different PlayStation account to the Microsoft account.
