Can I play rock band using Xbox series X controller without the need of a guitar or can I use a my guitar hero guitar from my Xbox one

that is the one that won't work with the black and white buttons. it should be compatible with your console if it's the Xbox one version, but not with rock band and only with guitar hero live

Microsoft confirmed just before the backward compatibility started that games that required peripherals such as Rock Band, Lips, DJ Hero, Guitar Hero would not be backward compatible as the peripherals were not compatible with the Xbox One.

You can use the Xbox 360 wireless instruments on the Xbox One using the Rock Band 4 adapter, but only for Rock Band 4

Regarding your question towards using a Guitar Hero Live Xbox Controller, it will not work properly with Rock Band 4.

The controller was/is intended to work for Guitar Hero Live. If you try to use it with games before or after it will have lag and will not function properly.
