it depends how long is left on your Game Pass Ultimate, but you would need to turn off recurring billing for Game Pass Ultimate then wait until that runs out before using the code for Live Gold.

did she cancel Ultimate Game Pass or did she turn off recurring billing/auto renew?

if she only turned off recurring billing then the subscription will continue up to the renewal date

You can add a new payment method and tell your son to select that whenever he wants to purchase an add on

Sign in to the Microsoft account you want to update.

Go to Payment & billing and select Payment options. You can add or edit payment methods from here.

Under Payment methods, you can Add a new payment method, View or edit card, or Remove card.

Enter your updated info, and select Save.

Your Gold subscription would've converted at a set ratio to Game Pass Ultimate, you will still have live gold but with the added bonus of Game Pass. To stop recurring billing sign into the services and subscriptions page of your Microsoft account, there
you will see that your live gold was converted to Xbox game pass ultimate. And you will see your current game pass ultimate subscription including when the next charge is due. If you go to manage subscription you will see payment settings where you can cancel
subscription or you can change recurring billing, if you turn off recurring billing you will get a warning that your subscription will end and it will give you a date. Just click yes then on that date your subscription will end and you can then re-subscribe
to whichever service you decide.
