Xbox one X Scorpio edition keeps shutting down while playing Minecraft

That we have, we had done a console reset after reinstalling the game and reset the cache on the console

Thanks for reaching out to the Forums for advice on how to hopefully get your console to stop doing that. I can totally understand how this could be concerning/distressing especially if you normally would play Minecraft a bunch.

I read that you had already hard reset the console a couple of times before, but have you tried a soft factory reset of the console? It's a factory reset that cleans out your console, reinstalls the current version of the dashboard,
doesn't uninstall any of your games/apps and in general is a great troubleshooting step for most problems.

Once you have made sure that your network is set up appropriately (with an open NAT type) and that you have all the sign-in information for any important gamertags you have on your console, try the steps outlined in our How
to reset your console to factory defaults on Xbox One and select the option denoted in reset and keep my games & apps.

I have done both actually. I uninstalled the game and reinstalled in on both the internal and external hard drive as well as doing a hard reset. After doing a hard reset and loading the game it works for about 5 min. Then shuts down once again.

So currently at this moment we have played on the xbox for a couple of hours and have had no issues. If things change I will be sure to update on that. Thank you for your help in this matter.
