hello,

i just bought an xbox one s for my kids. i am just setting it up and during the setup it checks for updates and then it brings up

There is the problem with update.

You need this update to use your console, but something went wrong.

it will not let me skip this and continue. i am stuck in the set up of this xbox. i have done the factory reset and am still having an issue. what do i do to fix this?

There's no such thing as an Xbox One Series S. There's an Xbox One S and an Xbox Series S. That game is only available for the Series S/X, not the One. So if you have a One S, it will not work.
