I checked and there was an update for Game Bar in Windows Store. When I downloaded it, a "xbox game bar" process appeared and there was another process named "xbox gaming overlay" which seems to be the startup animation for game bar. Apart from this process,
nothing changed and when I rebooted, this process disappeared.

However I didn't try to uninstall the latest update of Windows..

Also you could try restarting the Xbox Game Bar App. Please try the following steps,

• Right Click on the Task bar
• Task Manager
• Find Xbox Game Bar
• Right Click and End Task,
• Open up the Start Menu
• Find and Open Xbox Game Bar near the bottom

Please make sure that your Windows 10 and Xbox Game Bar app are fully updated. For PC update, open Settings (Win + I). Go to Update & Security > Windows Update. Click Check for updates and install any available updates.

To update Xbox gamebar, open Microsoft Store. Click on your profile icon and select App updates. Find Xbox Game Bar and click Update.

Once both are up to date, restart your device.

And then uninstall and reinstall Xbox gamebar via Microsoft Store.

Next is to reset Game Bar settings. To do this, go to Windows Settings > Gaming > Xbox Game Bar and reset its settings.
